FOREST BERRY BROWNIE

This recipe if from Eating Clean, Living Paleo by Rachael Devcich, Cave Girl New Zealand.

I've made this MANY times for our family and I highly recommend it for yours! I love it because it's chocolaty and really filling and uses only whole foods! 

 

INGREDIENTS

  • 100g coconut oil
  • 3 Tb honey
  • 2 C frozen berries
  • 3 eggs
  • 1 t vanilla extract
  • 1/2 C cocoa
  • 1/4 C coconut flour
  • inch of salt

METHOD

1) Preheat oven to 180 degrees Celsius then line a 21cm square tin with baking paper.

2) In a small pan, gently heat the coconut oil, honey and frozen berries until the liquid is melted and the berries defrosted.

3) Whisk the eggs and vanilla in a medium-sized bowl. Add the oils and berry mixture and whisk again. Finally, add the cocoa, coconut flour and salt then mix until well combined.

4) Pour the mixture into the lined Tim then bake for 20 minutes. The middle should be moist and slightly undercooked. Lift the brownie out of the tin and cool on a wire rack.

Cut the brownie into pieces then freeze in an airtight container in between layers of baking paper. Add a frozen piece to each lunchbox or pull out when you feel like a nutritious snack, it doesn't take long to thaw!
